Ingredients
All-purpose flour: 2 cups
Granulated sugar: 1 cup
Baking powder: 1 teaspoon
Salt: 1/2 teaspoon
Large eggs: 3
Vanilla extract: 1 teaspoon
Orange zest: 2 teaspoons (from about 1 large orange)
Almond extract: 1/2 teaspoon
Sliced or slivered almonds: 1 cup
Orange juice: 2 tablespoons (for brushing)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, lightly beat the eggs. Stir in the vanilla extract, orange zest, and almond extract.
Pour the wet ingredients into the dry ingredients. Mix until just combined; the dough will be stiff.
Gently fold in the sliced almonds.
Divide the dough in half. On the prepared baking sheet, shape each half into a log, about 10 inches long and 2 inches wide. Keep the logs about 3 inches apart.
Bake for 25 to 30 minutes, or until the logs are lightly golden and firm to the touch.
Remove from the oven and let the logs cool on the baking sheet for 15 minutes.
Reduce the oven temperature to 300°F (150°C).
Carefully transfer the warm logs to a cutting board. Using a serrated knife, slice each log diagonally into 1/2-inch thick cookies.
Place the slices cut-side down on the baking sheet. Brush the tops lightly with orange juice.
Bake for another 10 to 15 minutes per side, turning once, until the biscotti are dry and crisp.
Cool completely on a wire rack before storing.
Notes
You can substitute finely chopped pistachios for some of the almonds.
For extra citrus flavor, you can lightly dust the baked biscotti with powdered sugar mixed with a bit of extra orange zest.
Store your biscotti in an airtight container at room temperature for up to two weeks.
