Ingredients
Scale
1 whole chicken (about 4-5 lbs)
2 lemons, halved
1 orange, halved
4 sprigs fresh rosemary
4 cloves garlic, smashed
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat your oven to 425 degrees F (220 degrees C).
Pat the chicken completely dry with paper towels. This helps the skin crisp up nicely.
Place the lemon halves, orange halves, rosemary sprigs, and smashed garlic inside the chicken cavity.
Rub the entire outside of the chicken with olive oil.
Season the chicken generously, inside and out, with salt and pepper.
Place the chicken in a roasting pan or a large oven-safe skillet.
Roast for 15 minutes at 425 degrees F.
Reduce the oven temperature to 375 degrees F (190 degrees C). Continue roasting for about 1 hour and 15 minutes more, or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F (74 degrees C).
Let the chicken rest for 10 to 15 minutes before carving. This keeps the juices inside.
Notes
For extra crispy skin, you can rub a little butter under the skin before adding the citrus.
You can use any combination of citrus fruits you enjoy, like grapefruit or limes.
Feel free to add chopped carrots or onions to the bottom of the roasting pan for a simple side vegetable.
