Enjoy a rich and deeply flavorful classic French Onion Soup, featuring sweet, slow-caramelized onions swimming in a savory broth, all crowned with a thick layer of perfectly melted, bubbly cheese.

Ingredients

Scale
  • 6 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 cloves garlic, minced
  • 1/2 cup dry sherry or dry white wine
  • 8 cups beef broth, high quality
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Freshly ground black pepper to taste
  • 1 baguette, sliced into 1-inch thick rounds
  • 8 ounces Gruyère cheese, grated

Instructions

  1. Melt butter in a large, heavy-bottomed pot or Dutch oven over medium heat.
  2. Add the sliced onions, salt, and sugar. Cook slowly, stirring occasionally, for 40 to 50 minutes until the onions are deeply caramelized and brown. Do not rush this step; patience creates the flavor.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the sherry or wine, scraping up any browned bits from the bottom of the pot. Let it reduce for 2 minutes.
  5. Add the beef broth, thyme, and bay leaf. Bring the soup to a simmer.
  6. Reduce heat to low, cover partially, and let it simmer gently for at least 30 minutes to allow the flavors to meld. Remove the bay leaf and season with pepper.
  7. Preheat your broiler. Place oven-safe bowls on a baking sheet. Ladle the soup into the bowls.
  8. Top each bowl with several slices of baguette, ensuring they sit on top of the liquid.
  9. Generously cover the bread with grated Gruyère cheese.
  10. Place the baking sheet under the broiler for 2 to 4 minutes, watching carefully, until the cheese is melted, bubbly, and golden brown.

Notes

  • Use high-quality beef broth; it makes a real difference in the final taste.
  • Caramelizing the onions slowly is the most important part of this recipe. Keep the heat low.
  • You can toast the baguette slices lightly before adding the cheese for extra structure.
