Ingredients

Scale
  • 2 tablespoons coconut oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 2 stalks lemongrass, tough outer layers removed, bruised, and cut into 2-inch pieces
  • 1 quart chicken broth
  • 1 (13.5 ounce) can full-fat coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh cilantro and lime wedges, for serving

Instructions

  1. Heat the coconut oil in a large pot or Dutch oven over medium heat.
  2. Add the chicken pieces and cook until lightly browned. Remove the chicken and set aside.
  3. Add the onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the garlic and ginger. Cook for 1 minute until fragrant.
  5. Add the lemongrass pieces, chicken broth, coconut milk, fish sauce, lime juice, sugar, and red pepper flakes (if using).
  6. Bring the mixture to a gentle simmer. Reduce heat to low, cover, and cook for 15 minutes, allowing the flavors to meld.
  7. Return the cooked chicken to the pot. Simmer gently for another 5 minutes, or until the chicken is fully cooked through.
  8. Remove and discard the lemongrass pieces before serving.
  9. Ladle the soup into bowls. Garnish generously with fresh cilantro and serve with lime wedges on the side.

Notes

  • You can adjust the fish sauce and lime juice to your taste preference.
  • If you like a richer coconut flavor, use only half the broth and substitute the other half with more coconut milk.
  • For a spicier soup, add more red pepper flakes or a dash of your favorite chili paste.
