Make soft, fluffy cookies quickly using only three main ingredients: cake mix, eggs, and whipped topping.

Ingredients

Scale
  • 1 box (15.25 oz) dry cake mix (any flavor)
  • 2 large eggs
  • 1 cup frozen whipped topping (Cool Whip), thawed
  • 1/2 cup powdered sugar (for rolling, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the dry cake mix, eggs, and thawed whipped topping. Mix with a spoon or electric mixer until just combined into a soft dough. Do not overmix.
  3. If desired, place powdered sugar in a shallow dish.
  4. Scoop the dough using a tablespoon or small cookie scoop. Roll each scoop into a ball.
  5. If using powdered sugar, roll the dough balls completely in the sugar until coated.
  6. Place the dough balls about 2 inches apart on the prepared baking sheets.
  7. Bake for 9 to 12 minutes, or until the edges are set but the centers still look soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • You can use any flavor of cake mix, such as chocolate, yellow, or spice, to change the cookie flavor.
  • For a crinkle effect, rolling the dough in powdered sugar before baking is necessary.
  • These cookies are best eaten within 3 days for maximum softness.
