Make a homemade apple cider vinaigrette that closely matches popular restaurant styles. This recipe focuses on achieving the right balance of sweet and tangy flavor.

Ingredients

Scale
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small clove garlic, minced (optional)

Instructions

  1. Combine the apple cider vinegar, maple syrup (or honey), Dijon mustard, salt, pepper, and minced garlic (if using) in a small bowl or jar.
  2. Whisk the ingredients together until the mustard and sweetener are dissolved.
  3. Slowly drizzle in the olive oil while continuously whisking vigorously.
  4. Continue whisking until the dressing emulsifies and thickens slightly.
  5. Alternatively, place all ingredients in a jar with a tight-fitting lid and shake well until fully combined and creamy.
  6. Taste the dressing and adjust seasoning if needed; add more sweetener for sweetness or more vinegar for tang.

Notes

  • For a thicker dressing, use slightly less oil or add 1/4 teaspoon of xanthan gum while blending.
  • If you want a slightly sweeter profile, increase the maple syrup to 3 tablespoons.
  • This dressing works well on green salads, slaws, and as a marinade for chicken.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
