A simple recipe for preparing crispy corn ribs seasoned with a smoky chili lime mixture, perfect as a summer side dish.

Ingredients

Scale
  • 4 ears fresh corn, shucked
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lime, cut into wedges for serving
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the corn: Stand an ear of corn upright on a cutting board. Carefully slice the corn cob vertically into four equal wedges, running the knife from top to bottom along the cob. Repeat for all ears.
  2. In a small bowl, mix the olive oil, chili powder, smoked paprika, cumin, salt, and pepper to create the seasoning paste.
  3. Brush the seasoning paste evenly over all sides of the corn ribs.
  4. Choose your cooking method: For grilling, preheat your grill to medium heat. Place the ribs directly on the grates and cook for 8 to 10 minutes, turning occasionally until slightly charred and tender. For air frying, place ribs in a single layer in the air fryer basket and cook at 380F (195C) for 10 to 12 minutes, flipping halfway through.
  5. Remove the cooked corn ribs from the heat.
  6. Serve immediately garnished with fresh cilantro and lime wedges for squeezing over the top.

Notes

  • Use a sharp, sturdy knife when cutting the corn cob into ribs. Place a damp towel under the cutting board for stability.
  • If you prefer a street corn style, mix mayonnaise or crema with cotija cheese and spread it over the ribs after cooking before adding the lime and cilantro.
  • For extra smoky flavor, use chipotle powder in place of some of the chili powder.
