Make a quick, high-protein, fudgy brownie in minutes using cottage cheese in the microwave. This is the perfect healthy chocolate mug fix for one.

Ingredients

Scale
  • 1/4 cup cottage cheese (blended smooth)
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon maple syrup or sweetener of choice
  • 1 teaspoon melted coconut oil or butter
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour or almond flour
  • 1/8 teaspoon baking powder
  • 1 small square dark chocolate (optional, for topping)

Instructions

  1. If your cottage cheese is lumpy, blend it in a small blender or food processor until completely smooth. This step is key for texture.
  2. In a microwave-safe mug or small ramekin, combine the blended cottage cheese, egg, cocoa powder, sweetener, melted oil, and vanilla extract. Whisk well until fully incorporated.
  3. Stir in the flour and baking powder until just combined. Do not overmix.
  4. If using, press the small square of dark chocolate gently into the top center of the batter.
  5. Microwave on high for 60 to 90 seconds. Cooking time varies by microwave power. Start checking at 60 seconds. The brownie is done when the edges look set and the center is mostly firm but still slightly moist.
  6. Let the brownie cool in the mug for 2 minutes before eating.

Notes

  • For a fudgier result, use almond flour instead of regular flour and slightly reduce the cooking time.
  • If you want a richer chocolate flavor, add 1/2 teaspoon of instant coffee granules to the dry ingredients.
  • This recipe works well as a low carb microwave dessert if you use a zero-calorie sweetener instead of maple syrup.
