A recipe for pan-seared steak served with cheese tortellini tossed in a rich, intensely flavored cracked garlic butter sauce.

Ingredients

Scale
  • 1 pound sirloin steak, cut into bite-sized pieces
  • 1 (16 ounce) package cheese tortellini
  • 1 head garlic, cloves separated and smashed (cracked)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 cup beef broth
  • 1/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the steak pieces with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the steak pieces until browned on all sides and cooked to your desired doneness, about 3-4 minutes per side for medium-rare. Remove the steak from the skillet and set aside.
  3. Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil and the 4 tablespoons of butter to the same skillet. Add the cracked garlic cloves. Cook, stirring frequently, until the garlic is fragrant and lightly golden brown, about 3 minutes. Do not let the garlic burn.
  4. Pour in the beef broth and scrape up any browned bits from the bottom of the skillet. Let the broth simmer and reduce slightly for 2 minutes.
  5. Stir in the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
  6. While the sauce simmers, cook the tortellini according to package directions until al dente. Reserve about 1/2 cup of the pasta cooking water before draining.
  7. Drain the tortellini and add them directly to the skillet with the sauce. Toss to coat.
  8. Stir in the Parmesan cheese until the sauce thickens slightly. If the sauce is too thick, add a splash of the reserved pasta water until you reach your preferred consistency.
  9. Return the cooked steak to the skillet and toss gently to combine and reheat.
  10. Garnish with fresh parsley before serving.

Notes

  • For a deeper garlic flavor, allow the cracked garlic to infuse the oil and butter over low heat for 5 minutes before adding the broth.
  • Use fresh or frozen cheese tortellini for the best texture.
  • You can substitute the sirloin steak with flank steak or ribeye.
