This Cranberry Orange French Toast Bake brings a bright, tart citrus flavor to your breakfast table. It is an easy, make-ahead dish perfect for sharing with family and friends.

Ingredients

Scale
  • 1 loaf (about 1 pound) stale, thick-cut bread (like brioche or challah), cut into 1-inch cubes
  • 1 cup fresh or frozen cranberries
  • Zest of 2 large oranges
  • 1/2 cup fresh orange juice
  • 1/2 cup milk (whole or 2%)
  • 1/4 cup heavy cream
  • 3 large eggs
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Optional Glaze: 1/2 cup powdered sugar mixed with 1 tablespoon orange juice

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Arrange the bread cubes evenly in the prepared dish.
  3. Scatter the cranberries over the bread cubes.
  4. In a large bowl, whisk together the orange juice, milk, heavy cream, eggs, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
  5. Stir in the orange zest.
  6. Slowly pour the custard mixture evenly over the bread and cranberries.
  7. Gently press down on the bread to help it soak up the liquid.
  8. Cover the dish tightly with plastic wrap.
  9. Refrigerate for at least 4 hours, or preferably overnight.
  10. When ready to bake, preheat your oven to 350°F (175°C). Remove the plastic wrap.
  11. Bake for 40 to 45 minutes, or until the top is golden brown and the center is set.
  12. If using the glaze, whisk the powdered sugar and orange juice until smooth. Drizzle over the warm French toast bake before serving.

Notes

  • Using stale bread helps the cubes absorb the custard without becoming mushy.
  • You can substitute fresh orange juice with bottled, but fresh tastes brighter.
  • For an extra crunchy top, sprinkle 1/4 cup of chopped pecans over the top before baking.
