Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup orange juice, freshly squeezed
  • 1 teaspoon orange zest
  • 1/2 cup buttermilk
  • 1 cup fresh or frozen cranberries
  • 1/2 cup packed brown sugar
  • 2 tablespoons butter, melted
  • 1/4 cup orange slices, thinly cut

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this aside.
  4. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time, mixing well after each addition.
  6. In a small bowl, mix the orange juice, orange zest, and buttermilk.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture. Mix until just combined. Do not overmix.
  8. Prepare the topping: In the prepared cake pan, sprinkle the brown sugar evenly over the bottom. Drizzle with the 2 tablespoons of melted butter.
  9. Arrange the thin orange slices over the brown sugar mixture. Scatter the cranberries over the top of the orange slices.
  10. Gently pour the cake batter over the fruit layer, spreading it evenly with a spatula.
  11. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  12. Remove the cake from the oven and let it cool in the pan for 10 minutes.
  13. Place a serving plate upside down over the cake pan. Carefully flip the pan and plate together. Lift the pan off the cake. Serve warm.

Notes

  • If you use frozen cranberries, do not thaw them before using.
  • Freshly squeezed orange juice gives the best flavor for both the cake and the zest.
  • This cake tastes wonderful served slightly warm with a dollop of whipped cream.
