Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup chopped yellow onion (about 1 medium)
  • 1 cup chopped carrots (about 2 medium)
  • 1 cup chopped celery (about 2 ribs)
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 1/2 cup heavy cream
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and add Italian seasoning. Bring to a simmer.
  5. Return the browned chicken to the pot. Season with salt and pepper.
  6. Reduce heat to low, cover, and simmer for 15 minutes to allow flavors to meld.
  7. Stir in heavy cream and bring the soup back to a gentle simmer, do not boil.
  8. Add the gnocchi and cook according to package directions, usually 2-3 minutes, until they float to the surface.
  9. Stir in Parmesan cheese until melted and combined.
  10. Ladle soup into bowls, garnish with fresh parsley, and serve immediately.

Notes

  • For a thicker soup, you can mash some of the cooked vegetables against the side of the pot.
  • If you don’t have potato gnocchi, you can substitute with pasta like ditalini or orzo.
  • Adjust seasonings to your preference.
