Enjoy this rich and flavorful Creamy Garlic Mashed Cauliflower. We swap potatoes for tender cauliflower, blending it with sweet, slow-roasted garlic for a satisfying, healthier side dish. Sasha brings the bold flavor here!

Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 4 whole garlic heads
  • 2 tablespoons olive oil, divided
  • 1/4 cup heavy cream (or milk of choice)
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Slice the top off each garlic head to expose the cloves. Drizzle each head with 1 teaspoon of olive oil and wrap tightly in foil.
  3. Toss the cauliflower florets with the remaining 1 tablespoon of olive oil, salt, and pepper on a baking sheet.
  4. Roast the cauliflower and the garlic for 25 to 30 minutes, or until the cauliflower is tender and the garlic is soft and golden brown.
  5. Squeeze the roasted garlic from its skin into a bowl. You should have about 4 to 6 cloves of soft garlic. Mash the garlic with a fork.
  6. Place the roasted cauliflower into a food processor or a large bowl if using an immersion blender.
  7. Add the roasted garlic, heavy cream, and butter to the cauliflower.
  8. Process or blend until completely smooth and creamy. Stop and scrape down the sides as needed.
  9. Taste the mixture. Add more salt or pepper if you think it needs it.
  10. Serve your creamy garlic mashed cauliflower warm.

Notes

  • For an extra smooth texture, you can steam the cauliflower instead of roasting it before blending.
  • If you do not have a food processor, an immersion blender works well, but you may need to blend in smaller batches.
  • Sasha likes to add a pinch of smoked paprika for a little extra depth.
