Ingredients

Scale
  • 4 (6-ounce) salmon fillets
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon dried Italian seasoning
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season the salmon fillets generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the salmon for 3-4 minutes per side until golden brown. Remove the salmon from the skillet and set aside.
  4. Reduce the heat to medium. Add the minced garlic and sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  5. Pour in the chicken broth and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
  6. Stir in the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
  7. Reduce the heat to low. Stir in the Parmesan cheese until the sauce is smooth and melted.
  8. Add the fresh spinach to the sauce, stirring until it wilts, about 2 minutes.
  9. Return the salmon fillets to the skillet, nestling them into the sauce. Spoon some sauce over the tops of the salmon.
  10. Cook for another 3-5 minutes, or until the salmon is cooked through to your liking.
  11. Garnish with fresh parsley before serving.

Notes

  • You can use frozen spinach if you squeeze out all the excess water first.
  • For a tangier flavor, add a splash of white wine to deglaze the pan before adding the broth.
  • Serve this salmon over pasta, rice, or with crusty bread to soak up the delicious sauce.
