Make tender pork chops smothered in a rich, savory, and creamy mushroom sauce. This recipe is simple to follow and delivers wonderfully flavorful results for your dinner table.

Ingredients

Scale
  • 4 boneless pork chops (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 ounces cremini mushrooms, sliced
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (like Pinot Grigio)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season both sides of the pork chops generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the pork chops for 3 to 4 minutes per side until golden brown. Remove the chops from the skillet and set them aside.
  4. Reduce the heat to medium. Add the butter to the skillet.
  5. Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 to 7 minutes.
  6. Add the minced shallot and garlic to the pan. Cook for 1 minute until fragrant.
  7. Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half.
  8. Pour in the chicken broth and add the fresh thyme. Bring the sauce to a gentle simmer.
  9. Return the pork chops to the skillet. Cover and cook for 5 to 8 minutes, or until the pork reaches an internal temperature of 145°F.
  10. Remove the pork chops from the sauce and cover them loosely with foil to rest.
  11. Stir the heavy cream into the sauce in the skillet. Let it simmer gently until the sauce thickens slightly, about 2 minutes. Taste and adjust seasoning if needed.
  12. Serve the pork chops immediately, spooning the creamy mushroom sauce generously over the top. Garnish with fresh parsley.

Notes

  • Sasha suggests tasting the sauce before adding the cream; sometimes a splash of lemon juice brightens the flavor profile.
  • You can use any mushrooms you have on hand; a mix adds texture.
  • If you skip the wine, substitute it with extra broth and a teaspoon of white vinegar for acidity.
