Make this comforting Creamy Tomato Basil Soup. It is simple to prepare and bursts with fresh basil flavor. This recipe is perfect for a warm, satisfying meal shared with people you care about.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup fresh basil leaves, packed, plus more for garnish
  • 1/2 cup heavy cream
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the crushed tomatoes and vegetable broth. Bring the mixture to a simmer.
  5. Reduce the heat to low, cover, and let it cook for 15 minutes to let the flavors blend.
  6. Remove the pot from the heat. Stir in the fresh basil leaves and the sugar, if using.
  7. Use an immersion blender to blend the soup until completely smooth. Alternatively, carefully transfer the soup in batches to a regular blender and blend until smooth, returning it to the pot.
  8. Stir in the heavy cream until fully incorporated and the soup is creamy. Heat gently, but do not boil.
  9. Season with salt and pepper to your liking.
  10. Serve hot, garnished with extra fresh basil.

Notes

  • You can substitute half-and-half for heavy cream for a slightly lighter soup.
  • For an extra depth of flavor, roast the tomatoes before using them.
  • If you prefer a tangier soup, omit the optional sugar.
  • Taste the soup before adding salt; some broths are already high in sodium.
