Make a rich, velvety tomato bisque using roasted tomatoes and fresh basil for deep flavor. This soup is perfect for a cozy dinner and pairs well with grilled cheese.

Ingredients

Scale
  • 3 lbs ripe tomatoes, halved
  • 1 large yellow onion, roughly chopped
  • 4 cloves garlic, smashed
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, packed
  • 1 teaspoon sugar (optional, to balance acidity)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the halved tomatoes, onion, and smashed garlic with olive oil, salt, and pepper on a large baking sheet.
  3. Roast for 30 to 35 minutes, until the tomatoes are softened and slightly caramelized.
  4. Transfer the roasted vegetables and any accumulated juices to a large pot.
  5. Add the vegetable broth to the pot. Bring the mixture to a simmer over medium heat.
  6. Cook for 10 minutes, allowing the flavors to combine.
  7. Remove the pot from the heat. Stir in the fresh basil leaves.
  8. Use an immersion blender or carefully transfer the soup in batches to a regular blender to blend until completely smooth and velvety.
  9. Return the pureed soup to the pot over low heat. Stir in the heavy cream and sugar, if using. Heat through gently without boiling.
  10. Serve immediately.

Notes

  • For an extra smooth texture, press the pureed soup through a fine-mesh sieve before adding the cream.
  • Serve this bisque hot alongside your favorite grilled cheese sandwich for dipping.
  • If you prefer a tangier soup, omit the optional sugar.
