Ingredients

Scale
  • 1 pound potato gnocchi
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 5 ounces fresh spinach
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cook the gnocchi according to package directions until tender. Drain well and set aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 4 minutes.
  4. Add the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the diced tomatoes (with their juice) and the broth. Bring to a simmer and cook for 3 minutes, allowing the flavors to meld.
  6. Stir in the heavy cream, Parmesan cheese, and oregano. Season with salt and pepper.
  7. Add the fresh spinach to the sauce, stirring constantly until it wilts completely.
  8. Gently fold the cooked gnocchi into the creamy sauce until everything is coated.
  9. Transfer the gnocchi mixture to your prepared baking dish.
  10. Sprinkle the top evenly with the mozzarella cheese.
  11. Bake for 15 to 20 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden brown.
  12. Let it rest for a few minutes before serving.

Notes

  • Sasha suggests tasting the sauce before adding the gnocchi; add a pinch of red pepper flakes if you want a little heat.
  • You can use frozen spinach, just be sure to thaw it and squeeze out all excess water first.
  • If you prefer a thicker sauce, simmer the tomato/broth mixture for an extra few minutes before adding the cream.
