Ingredients
Scale
1 pound large shrimp, peeled and deveined
1 cup sweetened shredded coconut
1/2 cup panko breadcrumbs
1/4 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
1/2 cup all-purpose flour
Cooking spray
Instructions
In a shallow dish, combine the shredded coconut, panko breadcrumbs, salt, and pepper.
In another shallow dish, whisk the eggs.
In a third shallow dish, place the flour.
Pat the shrimp dry with paper towels.
Dredge each shrimp first in the flour, then dip into the egg, and finally coat thoroughly with the coconut-breadcrumb mixture.
Preheat your air fryer to 400°F (200°C).
Lightly spray the air fryer basket with cooking spray.
Arrange the coated shrimp in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding.
Spray the tops of the shrimp with cooking spray.
Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with your favorite dipping sauce.
Notes
For extra flavor, you can add a pinch of cayenne pepper to the coconut mixture.
Serve with sweet chili sauce, a mango salsa, or a spicy aioli for dipping.
Ensure shrimp are in a single layer for maximum crispiness.
