Ingredients
Scale
3 large Russet potatoes, scrubbed and cut into 1/2-inch thick sticks
4 cups vegetable oil, for frying (or follow air fryer instructions)
1/2 cup all-purpose flour
1 teaspoon salt, plus more for seasoning
1/2 teaspoon black pepper
4 cloves fresh garlic, minced very finely
1/2 cup grated Parmesan cheese, finely grated
2 tablespoons fresh parsley, chopped
Instructions
Soak the cut potatoes in a large bowl of cold water for at least 30 minutes. Drain them completely and pat them very dry with paper towels. This step removes starch and helps crisp the fries.
In a medium bowl, toss the dried potatoes with the flour, 1 teaspoon salt, and 1/2 teaspoon pepper until lightly coated.
Heat the vegetable oil in a deep, heavy-bottomed pot or deep fryer to 325°F (160°C). If using an air fryer, preheat it to 380°F (195°C).
For double-frying: Fry the potatoes in batches for 5 to 7 minutes until they are soft but not browned (blanching stage). Remove them with a slotted spoon and drain on a wire rack. Let them rest for 10 minutes.
Increase the oil temperature to 375°F (190°C). Fry the blanched potatoes again in batches for 2 to 4 minutes until they are deep golden brown and crispy. Remove and drain well.
For air frying: Cook the floured potatoes in a single layer (work in batches) for 15 minutes, shaking the basket halfway through. Increase temperature to 400°F (200°C) and cook for another 3 to 5 minutes until golden.
While the fries are hot, place them in a large bowl. Immediately add the minced garlic, grated Parmesan cheese, and chopped parsley. Toss quickly to coat evenly.
Taste and add additional salt if needed. Serve immediately with your preferred dipping sauce.
Notes
For the crispiest results, ensure your potatoes are completely dry before coating them with flour.
Use finely grated Parmesan cheese; large shreds will not adhere as well.
If you prefer a milder garlic flavor, mix the minced garlic with 1 tablespoon of oil and drizzle it over the fries after tossing with cheese.
