A recipe for making authentic Lebanese Arayes, focusing on achieving a very crispy exterior while keeping the spiced ground beef filling moist and flavorful inside pita bread.

Ingredients

Scale
  • 1 lb ground beef (at least 20% fat for juiciness)
  • 1 small onion, finely grated and squeezed dry
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
  • Pinch of cayenne pepper (optional)
  • 6 medium pita breads (not the thick pocket style, but the thinner kind if possible)
  • 3 tablespoons olive oil or melted butter for brushing

Instructions

  1. In a large bowl, combine the ground beef, grated onion, parsley, salt, pepper, allspice, cinnamon, and cayenne pepper if using.
  2. Mix the ingredients thoroughly with your hands until just combined. Do not overmix, as this can make the meat tough.
  3. Take one pita bread and carefully cut a slit along the curved edge to create a pocket opening.
  4. Divide the meat mixture into six equal portions. Take one portion and gently stuff it evenly inside the pita pocket, spreading the meat mixture thinly and close to the edges for even cooking. Repeat with the remaining pitas and meat.
  5. Preheat a large cast-iron skillet or griddle over medium heat. You want the pan hot enough to crisp the bread without burning the meat too quickly.
  6. Brush the outside surfaces of the stuffed pitas generously with olive oil or melted butter.
  7. Place the Arayes seam-side down first on the hot skillet. Cook for 4 to 6 minutes per side, pressing down gently with a spatula to ensure full contact with the pan for maximum crispiness.
  8. Check the internal temperature of the meat; it should reach 160°F (71°C) for safety and doneness. Adjust heat as needed to prevent burning before the meat cooks through.
  9. Remove the Arayes from the skillet when both sides are deep golden brown and crispy.
  10. Cut each Arayes in half diagonally before serving.

Notes

  • For extra crispiness, you can finish the Arayes in a 400°F (200°C) oven for 5 minutes after pan-frying.
  • Serving Arayes with fresh lemon wedges, plain yogurt, or tahini sauce adds moisture and balances the richness of the beef.
  • If you prefer grilling, brush the outside of the pitas with oil and place them over medium-high heat, turning frequently until crisp and cooked through.
