Make crunchy, flavorful chicken taquitos in your oven without frying. This recipe uses a simple technique to achieve maximum crispness.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • 3 cups cooked, shredded chicken breast
  • 1/2 cup salsa (medium heat)
  • 1/4 cup cream cheese, softened
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 12 small corn tortillas
  • Cooking spray (high heat recommended)
  • 1/4 cup grated Parmesan cheese (secret ingredient)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic, cumin, chili powder, and oregano; cook for 1 minute until fragrant.
  3. In a bowl, combine the shredded chicken, salsa, and softened cream cheese. Mix well.
  4. In a small separate bowl, whisk together the water and cornstarch until smooth. Add this slurry to the chicken mixture and stir until fully incorporated.
  5. Warm the corn tortillas briefly in the microwave (about 30 seconds wrapped in a damp paper towel) to make them pliable.
  6. Place about 2 tablespoons of the chicken filling near one edge of a tortilla. Roll the tortilla tightly. Secure the seam with a toothpick if necessary.
  7. Place the rolled taquitos seam-side down on the prepared baking sheet. Repeat with remaining tortillas and filling.
  8. Spray the tops of the taquitos generously with cooking spray. Sprinkle the grated Parmesan cheese evenly over the tops of the taquitos. This helps create the crisp crust.
  9. Bake for 12 to 15 minutes, then carefully flip the taquitos. Spray the second side lightly with cooking spray. Bake for another 10 to 15 minutes, or until golden brown and very crispy.
  10. Remove toothpicks before serving. Serve immediately with your favorite dipping sauces.

Notes

  • To prevent sogginess, ensure your chicken filling is not overly wet before rolling.
  • If you do not have corn tortillas, flour tortillas can be used, but they will require a longer baking time and may not achieve the same level of crispness.
  • For extra flavor, mix 1 teaspoon of taco seasoning into the chicken filling instead of the individual spices listed.
