Ingredients

Scale
  • 2 medium zucchini
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 large eggs, lightly beaten
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 425°F (220°C). Lightly grease a baking sheet or line it with parchment paper.
  2. Wash and trim the ends of the zucchini. Cut the zucchini into fry shapes, about 1/4 to 1/2 inch thick.
  3. Set up a dredging station with three shallow bowls.
  4. In the first bowl, mix the flour, salt, pepper, and garlic powder.
  5. Place the beaten eggs in the second bowl.
  6. Put the panko breadcrumbs in the third bowl.
  7. Take a zucchini stick and lightly coat it in the flour mixture, shaking off any excess.
  8. Dip the floured zucchini into the egg mixture, letting any excess drip off.
  9. Coat the zucchini thoroughly in the panko breadcrumbs, pressing gently so the crumbs stick well.
  10. Place the coated fries in a single layer on your prepared baking sheet. Do not overcrowd the pan.
  11. Bake for 15 to 20 minutes, flipping halfway through, until the fries are golden brown and crisp.
  12. Serve immediately and enjoy your healthy snack!

Notes

  • For extra crunch, bake on a wire rack placed over the baking sheet.
  • Pair these fries with your favorite dipping sauce, like a light yogurt dip.
  • Do not skip drying the zucchini slightly before coating; this helps the breading stick better.
