Make this wonderfully crunchy Cinnamon Maple Granola with Anya. This recipe brings together warm spices and sweet maple for a perfect breakfast topping. You will love the satisfying crunch in every bite.

Ingredients

  • Rolled Oats: 3 cups
  • Pecans, roughly chopped: 1 cup
  • Maple Syrup: 1/2 cup
  • Coconut Oil, melted: 1/4 cup
  • Ground Cinnamon: 1 tablespoon
  • Vanilla Extract: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Dried Cranberries (optional, added after baking): 1/2 cup

Instructions

  1. Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats and chopped pecans.
  3. In a separate small bowl, whisk together the maple syrup, melted coconut oil, ground cinnamon, vanilla extract, and salt until well combined.
  4. Pour the wet mixture over the dry ingredients. Stir well until all the oats and nuts are evenly coated.
  5. Spread the granola mixture onto the prepared baking sheet in a single, even layer. Do not press it down too firmly; this helps with crunch.
  6. Bake for 30 minutes.
  7. Remove the pan from the oven. Gently stir the granola. Return to the oven and bake for another 10 to 15 minutes, watching closely to prevent burning. The granola should be golden brown and fragrant.
  8. Let the granola cool completely on the baking sheet. It will crisp up as it cools.
  9. Once cool, stir in the dried cranberries, if using. Store your granola in an airtight container.

Notes

  • For clusters, avoid stirring too much after the first 30 minutes of baking.
  • Anya suggests using pure maple syrup for the best flavor.
  • You can substitute pecans with walnuts or slivered almonds.
