Ingredients
Scale
1 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup honey
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup sliced almonds, toasted
Instructions
Preheat your oven to 325°F (160°C). Line an 8×8 inch baking pan with parchment paper, letting the paper overhang on two sides for easy lifting.
In a large bowl, cream together the softened butter and sugar until light and fluffy. You can use a hand mixer or a sturdy spoon.
Beat in the honey and vanilla extract until well combined.
In a separate bowl, whisk together the flour and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
Stir in the toasted sliced almonds.
Press the dough evenly into the prepared baking pan. Use the bottom of a measuring cup to help flatten it.
Bake for 30 to 35 minutes, or until the edges are lightly golden brown.
Remove the pan from the oven. While still warm, score the shortbread into squares or fingers using a sharp knife.
Let the shortbread cool completely in the pan on a wire rack.
Once fully cooled, lift the shortbread out using the parchment paper overhang and cut along the scored lines. Enjoy your crumbly creation!
Notes
To toast almonds, spread them on a baking sheet and bake for 5-7 minutes until fragrant. Watch them closely so they do not burn.
For an extra crunchy texture, you can press a few extra almond slices onto the top of the dough before baking.
If you prefer a slightly different flavor, feel free to substitute the honey with maple syrup.
