A simple, creamy salad combining fresh cucumber with ranch flavor and a salty, crunchy topping.

Ingredients

Scale
  • 3 large cucumbers, peeled and sliced
  • 1 (16 ounce) container sour cream or Greek yogurt
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup crushed buttery crackers (like Ritz)
  • 1/2 cup chopped fresh dill
  • 1/4 cup white vinegar
  • 1 tablespoon sugar
  • Salt and black pepper to taste

Instructions

  1. Wash, peel, and thinly slice the cucumbers. Place them in a large bowl.
  2. In a separate medium bowl, whisk together the sour cream (or yogurt), dry ranch seasoning mix, vinegar, and sugar until smooth.
  3. Pour the ranch dressing mixture over the sliced cucumbers. Gently toss to coat all the cucumber pieces evenly.
  4. Stir in the chopped fresh dill and season with salt and pepper.
  5. Cover the bowl and refrigerate the salad for at least 2 hours to allow the flavors to meld.
  6. Just before serving, top the salad with the shredded cheddar cheese and the crushed buttery crackers. Do not mix the topping in beforehand, or it will become soggy.
  7. Serve cold.

Notes

  • For a lower carbohydrate version, substitute the crackers with toasted, crushed pork rinds or low-carb crunchy cereal pieces.
  • You can prepare the cucumber and dressing mixture up to one day ahead; add the cheese and crackers right before serving.
  • If you prefer a thinner dressing, add 1 to 2 tablespoons of milk or water to the sour cream mixture.
