Ingredients
Scale
8 ounces bittersweet chocolate, chopped
1/2 cup heavy cream
1/4 cup hazelnut spread (like Nutella)
1 teaspoon instant espresso powder
1/4 teaspoon pure vanilla extract
Pinch of salt
1/2 cup finely chopped toasted hazelnuts, for rolling
Instructions
Place the chopped chocolate in a medium heatproof bowl.
In a small saucepan over medium heat, warm the heavy cream until it just begins to simmer around the edges. Do not boil.
Pour the hot cream over the chopped chocolate. Let it sit undisturbed for 5 minutes to melt the chocolate.
Add the hazelnut spread, espresso powder, vanilla extract, and salt to the bowl.
Whisk the mixture gently, starting from the center and moving outward, until it is completely smooth and glossy. This is your ganache.
Cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the ganache to prevent a skin from forming.
Refrigerate for at least 2 hours, or until the ganache is firm enough to scoop.
Prepare a small plate with the toasted hazelnuts for rolling.
Use a small spoon or a melon baller to scoop out small portions of the chilled ganache. Roll each portion quickly between your palms to form a ball.
Roll the truffle immediately in the chopped hazelnuts until fully coated.
Place the finished truffles on a parchment-lined baking sheet.
Store the truffles in an airtight container in the refrigerator until ready to serve. Let them sit at room temperature for 10 minutes before eating for the best texture.
Notes
Toasting the hazelnuts brings out their deep flavor. Spread them on a dry pan over medium heat and stir often until fragrant.
If you prefer a stronger coffee taste, dissolve the espresso powder in one teaspoon of hot water before adding it to the cream mixture.
For a different coating, try rolling the truffles in cocoa powder or finely crushed coffee beans.
