Ingredients
Scale
1 pound ground beef
1 medium onion, chopped
1 (10.5 ounce) can condensed cream of chicken soup
1 (10 ounce) can condensed cream of mushroom soup
1 cup milk
1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
1 teaspoon chili powder
1/2 teaspoon cumin
2 cups shredded cheddar cheese, divided
1 (9.25 ounce) bag Nacho Cheese flavored Doritos, lightly crushed
1/2 cup sour cream (optional, for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
In a large bowl, combine the cream of chicken soup, cream of mushroom soup, milk, Ro-Tel, chili powder, and cumin. Stir until well mixed.
Fold the cooked beef and onion mixture into the soup mixture. Stir in 1 1/2 cups of the shredded cheddar cheese.
Spread half of the mixture into the prepared baking dish. Sprinkle half of the lightly crushed Doritos over this layer.
Spread the remaining beef mixture over the Doritos layer. Top evenly with the remaining 1/2 cup of cheddar cheese.
Bake for 20 minutes.
Remove the casserole from the oven. Sprinkle the remaining crushed Doritos over the top. Return to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and the topping is hot.
Let the casserole rest for 5 minutes before serving. Top individual servings with a dollop of sour cream, if desired.
Notes
For maximum crunch, crush your Doritos right before assembling the casserole.
You can substitute ground turkey or shredded cooked chicken for the ground beef in this recipe.
If you want a spicier flavor, use the Hot & Spicy variety of Doritos or add a dash of your favorite hot sauce to the filling.
