Bake bakery-style double chocolate muffins that deliver intense chocolate flavor and a wonderfully moist crumb, perfect for a rich morning indulgence.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup hot strong brewed coffee or water
  • 1 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate medium bowl, whisk together the buttermilk, oil, egg, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Carefully stir in the hot coffee (or water) until the batter is smooth. The batter will be thin.
  6. Fold in the chocolate chips.
  7. Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full.
  8. Bake for 5 minutes at 400 degrees F. Then, without opening the oven door, reduce the temperature to 375 degrees F (190 degrees C) and bake for an additional 15 to 18 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra gooey centers, press a few extra chocolate chips onto the top of each muffin cup just before baking.
  • Using hot coffee deepens the chocolate flavor without making the muffins taste like coffee.
  • Buttermilk keeps these muffins tender; if you do not have buttermilk, mix 1 cup of regular milk with 1 tablespoon of white vinegar or lemon juice and let it sit for 5 minutes before using.
