- 2 large eggs
- 1 tablespoon milk or water
- 1/4 cup chopped fresh tomato
- 1 ounce fresh mozzarella, diced
- 1 teaspoon fresh basil, chopped
- Pinch of salt
- Pinch of black pepper
- Lightly grease two small ramekins or microwave-safe mugs.
- In a small bowl, whisk together the eggs and milk or water until combined. Add salt and pepper.
- Divide the chopped tomato and diced mozzarella evenly between the two prepared ramekins.
- Pour the egg mixture over the cheese and tomatoes in each ramekin, dividing it equally.
- Sprinkle the chopped basil on top of the eggs in both cups.
- Microwave on high for 60 to 90 seconds, or until the eggs are set. Cooking time varies by microwave power. Check at 60 seconds.
- Let the cups cool for one minute before carefully removing them from the ramekins. Serve immediately.
Notes
- If you do not have fresh mozzarella, use low-moisture shredded mozzarella, but reduce the amount slightly.
- For easier removal, line the ramekins with a small piece of parchment paper before greasing.
- If you prefer a firmer texture, cook for an additional 15 seconds.
