Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
2 tablespoons sriracha (adjust to your spice preference)
1 tablespoon rice vinegar
1 teaspoon honey or maple syrup
1 clove garlic, minced
Instructions
Prepare the chicken: In one shallow dish, mix the flour, salt, and pepper. In a second dish, place the beaten egg. In a third dish, place the panko breadcrumbs. Dredge each chicken piece first in the flour mixture, then dip in the egg, and finally coat thoroughly with the panko.
Cook the chicken: You can pan-fry or air-fry. For pan-frying, heat the oil in a large skillet over medium-high heat. Cook the coated chicken in batches for 5-7 minutes per side until golden brown and cooked through. For air frying, place chicken in a single layer in the basket and cook at 390°F (200°C) for 12-15 minutes, flipping halfway.
Make the sauce: While the chicken cooks, whisk together all Bang Bang Sauce ingredients (mayonnaise, sweet chili sauce, sriracha, rice vinegar, honey, and garlic) in a small bowl until smooth.
Combine: Once the chicken is cooked, place it in a large bowl and pour about two-thirds of the sauce over the chicken. Toss gently to coat all pieces evenly.
Assemble the bowls: Divide the cooked rice among four bowls. Top the rice with the mixed vegetables and the sauced Bang Bang Chicken. Drizzle the remaining sauce over the top of the bowls before serving.
Notes
For an air fryer method, spray the coated chicken lightly with cooking spray before air frying for extra crispiness.
If you prefer using chicken thighs, they will remain juicier but may require 1-2 minutes longer to cook fully.
You can substitute Greek yogurt for half the mayonnaise in the sauce for a lighter version.
