Ingredients

Scale
  • For the Crust:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • For the Toffee Filling:
  • 1 (14 ounce) can sweetened condensed milk
  • 2 tablespoons unsalted butter
  • For the Topping:
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, sliced
  • Shaved chocolate or cocoa powder, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Prepare the crust: In a medium bowl, whisk together the flour, granulated sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 18-20 minutes, or until the edges are lightly golden. Let it cool slightly.
  4. Make the toffee filling: In a small saucepan over medium heat, combine the sweetened condensed milk and butter. Stir constantly until the butter melts and the mixture thickens slightly, about 5-7 minutes. Do not let it boil rapidly.
  5. Pour the warm toffee evenly over the warm baked crust. Spread it gently. Let this layer cool completely at room temperature, then chill in the refrigerator for at least 1 hour until the toffee is firm.
  6. Prepare the topping: In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
  7. Arrange the sliced bananas over the chilled toffee layer.
  8. Spread the whipped cream topping evenly over the bananas.
  9. Chill the bars for another 30 minutes before slicing.
  10. Before serving, garnish the top with shaved chocolate or a dusting of cocoa powder. Cut into squares.

Notes

  • You can use store-bought dulce de leche instead of making the toffee filling for a quicker option.
  • Make sure your butter for the crust is very cold for the best texture.
  • Slice the bananas just before topping the bars to prevent browning.
