Make restaurant-quality chicken parmesan at home with this simple baked recipe. You get crispy, cheesy cutlets without the fuss.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 8 ounces fresh mozzarella cheese, sliced

Instructions

  1. Preheat your oven to 400 degrees F. Lightly grease a baking sheet.
  2. Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine panko breadcrumbs, 1/2 cup Parmesan cheese, oregano, and garlic powder. Season the breadcrumb mix with salt and pepper.
  3. Dredge each chicken cutlet first in the flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the cutlet firmly into the breadcrumb mixture to coat both sides completely.
  4. Heat olive oil in a large skillet over medium heat. Quickly sear the breaded cutlets for 1 to 2 minutes per side until golden brown. This step adds crispness. You may need to work in batches.
  5. Arrange the seared chicken cutlets on the prepared baking sheet.
  6. Spoon about 1/4 cup of marinara sauce over the top of each cutlet.
  7. Place a slice or two of mozzarella cheese over the sauce. Sprinkle with extra Parmesan cheese.
  8. Bake for 12 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees F) and the cheese is melted and bubbly.
  9. Serve your cheesy chicken cutlets immediately, perhaps over your favorite pasta for a family friendly pasta night.

Notes

  • For extra crispy chicken parmesan, you can lightly spray the tops of the breaded cutlets with cooking spray before baking.
  • Use high-quality marinara sauce; it makes a big difference in the final flavor.
  • This recipe works well for quick chicken parmesan when you are short on time.
