Ingredients
Scale
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup granulated sugar
1/4 cup unsalted butter, softened
1 large egg
1/2 cup milk
Vegetable oil, for frying
1/2 cup granulated sugar (for coating)
1 tablespoon ground cinnamon (for coating)
Instructions
In a large bowl, whisk together the flour, baking powder, salt, and 1/4 cup sugar.
Cut in the softened butter until the mixture resembles coarse crumbs.
Beat the egg and milk together, then add this liquid mixture to the dry ingredients. Mix until a soft dough forms.
Knead the dough briefly on a lightly floured surface, about 2 minutes. Cover the dough and let it rest for 30 minutes.
In a small bowl, mix the 1/2 cup sugar and 1 tablespoon cinnamon for the coating. Set aside.
Divide the dough into 8 equal pieces. On a floured surface, roll each piece very thin, aiming for a large, uneven circle or square shape (about 1/8 inch thick).
Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
Carefully fry one piece of dough at a time. Fry for about 30 to 60 seconds per side until golden brown and puffy.
Remove the buñuelo with tongs and place it on a wire rack lined with paper towels to drain excess oil.
While still warm, immediately dredge or sprinkle both sides of the buñuelo generously with the cinnamon-sugar mixture.
Serve immediately for maximum crispness.
Notes
For a traditional look, you can press a small hole in the center of the dough before frying.
If you do not have a thermometer, the oil is ready when a small piece of dough sizzles immediately and turns golden in under a minute.
You can drizzle melted honey or piloncillo syrup over the buñuelos instead of cinnamon sugar for a different flavor.
