Make this simple, cheesy Rotel dip using ground beef, Velveeta, and Rotel tomatoes in your slow cooker for easy party serving.

Ingredients

Scale
  • 1 pound ground beef
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (16 ounce) package Velveeta cheese, cubed
  • 1 (8 ounce) package cream cheese, cubed

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  2. Transfer the cooked ground beef to a small slow cooker.
  3. Add the undrained Rotel tomatoes, cubed Velveeta cheese, and cubed cream cheese to the slow cooker.
  4. Cook on LOW for 2 hours or on HIGH for 1 hour, stirring occasionally until all cheeses are fully melted and the dip is smooth.
  5. Stir well before serving warm with tortilla chips or crackers.

Notes

  • For a spicier dip, use the hot variety of Rotel tomatoes.
  • If you do not have a slow cooker, combine all ingredients in a saucepan and heat over low heat, stirring until smooth.
  • You can substitute ground sausage for the ground beef.
