Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 4 ears of corn, cut into 2-inch pieces
  • 1 pound small red potatoes, halved
  • 1 large onion, quartered
  • 2 lemons, sliced
  • 4 tablespoons butter
  • 2 teaspoons Old Bay seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your grill to medium heat (about 350°F).
  2. Tear off four large pieces of heavy-duty aluminum foil.
  3. Divide the potatoes, corn, sausage, and onion evenly among the center of each foil piece.
  4. Place the shrimp on top of the vegetables and sausage in each packet.
  5. In a small bowl, mix the melted butter, Old Bay seasoning, garlic powder, black pepper, and cayenne (if using).
  6. Drizzle the butter mixture evenly over the contents of each foil pack.
  7. Place two lemon slices on top of the ingredients in each pack.
  8. Fold the foil securely over the ingredients to create a sealed packet. Make sure the seams are tight to keep the steam in.
  9. Place the sealed foil packs directly on the grill grates.
  10. Grill for 12 to 15 minutes, or until the shrimp is pink and cooked through and the potatoes are tender.
  11. Carefully open the packets (watch out for hot steam) and serve immediately.

Notes

  • You can substitute the smoked sausage with andouille sausage for more heat.
  • If you do not have a grill, you can bake these in the oven at 400°F for 15-20 minutes.
  • For extra flavor, squeeze fresh lemon juice over the contents before sealing the foil.
