Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into pieces
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup eggnog
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • Pinch of ground cloves
  • Extra eggnog for drizzling (optional)
  • Ground nutmeg for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the crust: In a medium bowl, mix the flour, brown sugar, nutmeg, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 12-15 minutes until lightly golden. Set aside to cool slightly.
  4. Prepare the filling: In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  5. Beat in the eggnog, egg, vanilla extract, and ground cloves until just combined. Do not overmix.
  6. Pour the cheesecake filling evenly over the warm crust.
  7. Bake for 25-30 minutes, or until the edges are set and the center has only a slight jiggle.
  8. Let the bars cool completely on a wire rack. Then, chill in the refrigerator for at least 4 hours, or preferably overnight, before cutting.
  9. Once chilled, lift the bars out using the parchment overhang. Cut into squares.
  10. If desired, drizzle lightly with extra eggnog and dust with ground nutmeg before serving.

Notes

  • Make sure your cream cheese is fully softened for a smooth filling.
  • Chilling time is crucial for clean cuts. Be patient!
  • Feel free to add a small splash of rum or brandy extract to the filling for an adult twist.
