Ingredients
Scale
1 (8 ounce) package cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 cup cooked corn kernels (canned, frozen, or fresh)
1/2 cup cotija cheese, crumbled
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
Juice of 1 lime
1/4 cup grated Parmesan cheese (for topping)
Coating for topping: 1 tablespoon chili powder mixed with 1/2 teaspoon salt
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth.
Stir in the corn kernels, cotija cheese, cilantro, minced jalapeño, chili powder, smoked paprika, salt, and lime juice. Mix everything well.
Spread the mixture evenly into a small, oven-safe dish (about 1-quart size).
Sprinkle the top evenly with the Parmesan cheese.
Bake for 15 to 20 minutes, or until the dip is hot and bubbly around the edges.
Remove from the oven. Sprinkle the chili powder and salt mixture over the top for extra flavor.
Serve immediately with tortilla chips, sturdy crackers, or vegetable sticks.
Notes
Anya suggests using roasted corn for a deeper flavor.
If you like more heat, leave some seeds in the jalapeño.
You can assemble this dip ahead of time and bake it just before your guests arrive.
