Ingredients
Scale
4 large bell peppers (any color)
8 oz feta cheese, crumbled
1/4 cup fresh parsley, chopped
1 large egg, lightly beaten
1 tablespoon olive oil
1/4 teaspoon black pepper
Pinch of nutmeg
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the baking dish.
In a medium bowl, combine the crumbled feta cheese, chopped parsley, beaten egg, olive oil, black pepper, and nutmeg. Mix gently until just combined. You want the feta to remain somewhat crumbly.
Spoon the feta mixture evenly into each pepper half, mounding it slightly.
Bake for 25 to 30 minutes, or until the peppers are tender and the filling is lightly golden on top.
Let them cool slightly before serving warm.
Notes
Anya suggests using a mix of red, yellow, and orange peppers for a beautiful presentation.
If you prefer a softer pepper, you can blanch them in boiling water for 2 minutes before stuffing.
Taste your feta before adding salt, as feta cheese is naturally salty.
Serve these with a drizzle of good quality olive oil if desired.
