Ingredients

Scale
  • 4 large egg yolks
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 4 tablespoons granulated sugar
  • Neutral oil or butter for the pan

Instructions

  1. In a medium bowl, whisk together the egg yolks, milk, and vanilla extract until smooth.
  2. Sift the flour and baking powder over the yolk mixture. Whisk until just combined. Do not overmix the batter.
  3. In a separate, clean, grease-free bowl, beat the egg whites with an electric mixer on medium speed until foamy.
  4. Add the cream of tartar to the egg whites. Increase the speed to medium-high.
  5. Gradually add the sugar, one tablespoon at a time, beating until stiff, glossy peaks form. The meringue should hold its shape firmly.
  6. Gently fold one-third of the meringue into the yolk batter to lighten it.
  7. Carefully fold the remaining meringue into the batter in two additions. Use a spatula and cut down the middle, then sweep up the side of the bowl, turning the batter over itself. Stop folding when no white streaks remain; avoid deflating the air.
  8. Heat a large non-stick skillet or griddle over very low heat. Lightly grease the surface with oil or butter.
  9. Place large spoonfuls of the batter onto the skillet, forming thick rounds. You should have about 4 pancakes.
  10. Cover the skillet and cook for 4 to 5 minutes. The bottoms should be golden brown.
  11. Add a tablespoon of water to the skillet (away from the pancakes) and quickly cover again to create steam. This helps them rise.
  12. Carefully flip the pancakes using two thin spatulas. Cook the second side, covered, for another 4 to 5 minutes until fully cooked through and deeply golden.
  13. Serve immediately with your favorite toppings.

Notes

  • Keep your mixing bowl for the egg whites absolutely clean and free of any fat or yolk residue.
  • Use the lowest heat setting possible; these cook slowly to prevent burning before the center cooks.
  • Be very gentle when folding the meringue into the batter to keep the mixture light and airy.
  • A non-stick pan is crucial for easy flipping and clean release.
