Enjoy these wonderfully fluffy pancakes made with sweet potato, perfect for a warm and comforting breakfast. This recipe brings together simple ingredients for a soft, spiced treat.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup sweet potato puree (cooked and mashed)
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter or oil
  • 1 tablespoon sugar (optional, adjust to taste)

Instructions

  1. Whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a large bowl.
  2. In a separate bowl, whisk the sweet potato puree, egg, and milk until combined.
  3. Pour the wet ingredients into the dry ingredients. Gently mix until just combined; do not overmix. A few lumps are fine.
  4. Stir in the melted butter or oil and sugar, if using.
  5. Heat a lightly oiled griddle or non-stick pan over medium heat.
  6. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2-3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the other side until golden brown and fluffy.
  8. Serve immediately with your favorite toppings.

Notes

  • Make sure your sweet potato puree is smooth for the best texture.
  • For extra warmth, you can increase the cinnamon slightly.
  • If you prefer thinner pancakes, add a splash more milk.
  • Cook on medium heat to prevent the outside from burning before the center is cooked through.
