Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 large head of broccoli, cut into florets
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup chicken broth
1/4 cup heavy cream (optional, for a creamier sauce)
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season the chicken pieces evenly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the butter to the same skillet over medium heat. Once melted, add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the Italian seasoning.
Add the broccoli florets to the skillet. Cover and cook for 3-4 minutes until the broccoli is bright green and slightly tender-crisp.
Stir in the heavy cream, if using. Return the cooked chicken to the skillet. Toss everything gently to coat in the garlic butter sauce.
Cook for 1-2 minutes more until the chicken is heated through.
Remove from heat, garnish with fresh parsley, and serve immediately over rice or pasta.
Notes
For a low-carb option, skip serving over grains and enjoy as is.
If you prefer softer broccoli, cover and steam it in the sauce for an extra 2 minutes before adding the chicken back.
Use fresh garlic for the best flavor in the sauce.
