- 1 pound fresh green beans, trimmed
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/4 cup sliced almonds
- Salt, to taste
- Black pepper, to taste
- Blanch the green beans in boiling salted water for 3-4 minutes until bright green and tender-crisp.
- Drain the green beans immediately and plunge them into ice water to stop the cooking process. Drain well.
- Melt the butter in a large skillet over medium heat.
- Add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
- Add the sliced almonds to the skillet and toast them lightly, stirring constantly, for 1-2 minutes until golden brown.
- Add the blanched green beans to the skillet. Toss everything together to coat the beans in the garlic butter.
- Season with salt and pepper to your liking.
- Serve immediately.
Notes
- You can substitute olive oil for some or all of the butter for a slightly different flavor.
- Toast the almonds separately if you prefer them darker before adding the butter and garlic.
- Sasha suggests adding a tiny pinch of red pepper flakes for a little warmth.
