Ingredients
Scale
1 whole chicken (about 4 lbs)
8 tablespoons unsalted butter, softened
4 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme leaves
1 teaspoon salt
1/2 teaspoon black pepper
1 lemon, halved
Instructions
Preheat your oven to 425 degrees F (220 degrees C). Remove the giblets from the chicken cavity. Pat the chicken completely dry with paper towels.
In a small bowl, combine the softened butter, minced garlic, chopped parsley, thyme, salt, and pepper. Mix well until you have a smooth herb butter.
Gently separate the skin from the breast meat using your fingers. Rub about half of the herb butter directly onto the chicken breast meat under the skin.
Rub the remaining herb butter all over the outside of the chicken skin.
Place the lemon halves inside the chicken cavity.
Tie the chicken legs together with kitchen twine, if desired.
Place the chicken in a roasting pan or a large oven-safe skillet.
Roast for 15 minutes at 425 degrees F (220 degrees C).
Reduce the oven temperature to 375 degrees F (190 degrees C). Continue roasting for about 60 to 75 minutes more, or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F (74 degrees C).
Let the chicken rest for 10 to 15 minutes before carving.
Notes
Make sure your butter is truly soft to easily mix the herbs.
Drying the skin helps you achieve a crispier result.
Use fresh herbs for the best possible flavor.
If the skin starts browning too quickly, loosely tent the chicken with aluminum foil.
