Ingredients
Scale
3 medium zucchini
3 tablespoons olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried Italian seasoning
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
Wash and trim the ends off the zucchini. Cut the zucchini into half-inch thick rounds or sticks.
In a large bowl, toss the cut zucchini with olive oil, minced garlic, salt, pepper, and Italian seasoning until evenly coated.
Spread the seasoned zucchini in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to allow air circulation.
Roast for 15 minutes.
Remove the pan from the oven and sprinkle the grated Parmesan cheese evenly over the zucchini.
Return the pan to the oven and roast for another 5 to 10 minutes, or until the zucchini is tender and the cheese is lightly golden brown and melted.
Remove from the oven and serve immediately.
Notes
To prevent soggy zucchini, make sure the pieces are in a single layer on the baking sheet and do not overlap them.
For extra flavor, add a pinch of red pepper flakes with the seasoning before roasting.
This side dish pairs well with baked chicken or grilled fish.
