Make a simple, moist German Chocolate Poke Cake using a boxed mix. This recipe features a sweet soak poured over the warm cake and is topped with traditional gooey coconut-pecan frosting.

Ingredients

Scale
  • 1 box (approx. 15.25 oz) chocolate cake mix, plus ingredients listed on box (eggs, oil, water)
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup caramel topping or hot fudge sauce (optional, for extra richness)
  • 1 cup chopped pecans
  • 1 cup shredded sweetened coconut
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup evaporated milk
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the cake according to the box directions using a 9×13 inch baking pan. Bake until a toothpick inserted in the center comes out clean.
  2. While the cake is still hot from the oven, use the handle of a wooden spoon or a large fork to poke holes evenly across the entire surface of the cake, about 1 inch apart.
  3. In a small saucepan, combine the sweetened condensed milk and the caramel topping or hot fudge sauce, if using. Pour this mixture slowly and evenly over the entire surface of the hot cake, allowing it to soak into the holes. Set the cake aside to cool completely.
  4. Prepare the coconut-pecan frosting: In the same saucepan, combine the sugar, butter, and evaporated milk. Cook over medium heat, stirring constantly, until the butter melts and the mixture comes to a boil. Reduce heat to low and cook for 3 minutes, stirring constantly.
  5. Remove the saucepan from the heat. Quickly whisk in the egg yolks one at a time until fully incorporated. Stir in the vanilla extract, pecans, and coconut. The mixture will thicken as it cools slightly.
  6. Spread the warm frosting evenly over the cooled, soaked cake.
  7. Chill the cake for at least 2 hours before slicing and serving.

Notes

  • For the moistest results, do not overbake the cake. Check for doneness slightly before the recommended time.
  • You can make this cake one day ahead. Cover tightly and refrigerate.
  • If you prefer a richer soak, substitute half of the sweetened condensed milk with cream of coconut.
