Enjoy these warm and festive Gingerbread Pancakes perfect for a holiday breakfast. This recipe brings together the comforting spice blend of gingerbread in a fluffy pancake form. Lena, Anya, and Sasha from Savor Sensations share this delightful treat.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon brown sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter, plus more for the griddle
  • 1/4 cup molasses

Instructions

  1. Gather all your dry ingredients: flour, baking powder, salt, cinnamon, ginger, cloves, nutmeg, and brown sugar. Whisk them together in a large bowl.
  2. In a separate medium bowl, combine the milk, egg, melted butter, and molasses. Whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  4. Heat your griddle or large skillet over medium heat. Lightly grease it with butter.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for about 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the other side until golden brown.
  7. Serve immediately with your favorite toppings, like maple syrup or whipped cream.

Notes

  • For extra flavor, add 1/2 teaspoon of vanilla extract to the wet ingredients.
  • If you like a tangier flavor, you can substitute buttermilk for regular milk.
  • Feel free to adjust the spice amounts to suit your preference; Sasha likes a little extra ginger!
  • Keep the cooked pancakes warm on a baking sheet in a low oven (about 200°F) while you finish the batch.
