Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, ginger, cinnamon, cloves, nutmeg, salt, and sugar.
  2. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
  4. Preheat your waffle iron according to the manufacturer’s instructions.
  5. Lightly grease the waffle iron if necessary.
  6. Pour about 1/2 cup of batter onto the hot waffle iron for each waffle.
  7. Cook until golden brown and crisp, about 3-5 minutes, depending on your waffle iron.
  8. Serve immediately with your favorite toppings, such as whipped cream, maple syrup, or fresh berries.

Notes

  • For extra spice, add 1/4 teaspoon of black pepper to the dry ingredients.
  • If you don’t have all the individual spices, you can use 2 1/2 teaspoons of gingerbread spice blend.
  • The batter can be made ahead of time and stored in the refrigerator for up to 2 days. Whisk well before using.
