Ingredients
Scale
1.5 lb carrots, peeled and cut into 1-inch pieces
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons unsalted butter
3 cloves garlic, minced
1/4 cup honey
1 tablespoon water
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Place the cut carrots on a large baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
Spread the carrots in a single layer on the baking sheet.
Roast for 20 minutes.
While the carrots roast, prepare the glaze. In a small saucepan over medium heat, melt the butter.
Add the minced garlic to the melted butter and cook for about 1 minute until fragrant, being careful not to burn the garlic.
Stir in the honey and water. Bring the mixture to a gentle simmer and cook for 2 minutes, stirring constantly until the sauce thickens slightly. Remove from heat.
After the carrots have roasted for 20 minutes, remove the pan from the oven. Pour the honey garlic butter glaze over the carrots and toss gently to coat them completely.
Return the carrots to the oven and roast for another 10 to 15 minutes, or until the carrots are tender and the glaze is sticky and caramelized.
Serve immediately.
Notes
For easier cleanup, line your baking sheet with parchment paper before tossing the carrots with oil.
If you prefer softer carrots, cut them into smaller pieces before roasting.
To prevent the honey from burning during the final roasting stage, watch the oven closely after the 10-minute mark.
