Bake light, airy individual angel food cakes flavored with fresh lemon and topped with strawberries. This recipe uses a gluten-free flour blend for a delicate sponge.

Ingredients

Scale
  • 1 cup egg whites (about 8 large eggs), room temperature
  • 1 1/2 teaspoons cream of tartar
  • 1/2 teaspoon salt
  • 1 cup superfine granulated sugar, divided
  • 1/2 cup gluten-free all-purpose flour blend (with xanthan gum)
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin or use silicone baking cups. Do not flour the cups.
  2. In a large, clean, grease-free bowl, beat the egg whites, cream of tartar, and salt with an electric mixer on medium speed until soft peaks form.
  3. Gradually add 3/4 cup of the sugar, one tablespoon at a time, beating until stiff, glossy peaks form. Beat in the lemon juice and vanilla extract.
  4. In a separate small bowl, whisk together the remaining 1/4 cup sugar and the gluten-free flour blend and lemon zest until fully combined.
  5. Gently fold the flour mixture into the meringue in three additions, being careful not to deflate the egg whites. Fold just until no streaks of flour remain.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 22 minutes, or until the tops are lightly golden and spring back when touched.
  8. Immediately invert the cups onto a wire rack or bottle neck to cool completely. This prevents the cake from collapsing.
  9. Once cooled, gently remove the cakes from the cups. Top each angel food cup with sliced fresh strawberries before serving.

Notes

  • Use a gluten-free flour blend that contains xanthan gum for the best structure.
  • Ensure your mixing bowl and whisk attachments are completely free of grease or yolk for proper egg white volume.
  • For a sweeter topping, you can lightly toss the strawberries with a teaspoon of powdered sugar before placing them on the cake.
